Restaurante Tohqa – El Puerto de Santa María

Opened in 2020, Tohqa is the passion project of chef Eduardo Pérez and his brother Juanjo, who manages the front of house. Eduardo trained at the Luis Irízar cooking school in San Sebastián and honed his skills as the grill master at Cataria, the Andalusian outpost of Elkano. At Tohqa, he returns to his roots—both geographical and culinary—using open flame and wood-fired techniques to honour the purity of local produce from land and sea. In 2023, just three years after opening, the restaurant was awarded its first Michelin star, a major statement for this quiet corner of El Puerto.

Tohqa is a celebration of the Cádiz terroir. The tasting menu changes constantly but always reflects what’s seasonal and nearby—from wild herbs and foraged coastal greens to sustainable fish and pasture-raised meats. Everything, even the ceramic tableware, is handmade by local artisans. The space itself is minimalist and earthy, allowing the fire and the food to take centre stage. Intimate, authentic, and full of soul, Tohqa is one of the most compelling expressions of modern Andalusian cuisine today.
